What you need

Ingredients for Main

  • Tortillas • 4
  • Lean Ground Chicken (98%) 12 oz (340g)
  • Turkey Bacon • 4 slices, cooked and chopped
  • Fat-Free Shredded Mozzarella Cheese • 112g

Ingredients for Sauce (blend until smooth)

  • Enchilada Sauce • 4 tbsp (60g)
  • Chipotle Peppers in Adobo Sauce • 2 peppers
  • Fat-Free Cottage Cheese • 8 tbsp (120g)

How to make it

  1. In skillet over medium heat cook chicken until done, season with salt and pepper.
  2. While the chicken cooks, blend enchilada sauce, chipotle peppers, and cottage cheese until smooth
  3. Once chicken is cooked, stir in the blended sauce and cook together for another 1-2 minutes until well combined and heated.
  4. I cook bacon in batches ahead of time, so I have plenty available when needed. Chop cooked bacon into pieces
  5. Warm each burrito and assemble with 1⁄4 chicken mixture, bacon, and cheese.
  6. Roll each tortilla tightly into a burrito.
  7. Optional: Toast seam-side down in a dry skillet or air fryer until golden and the cheese melts.
