- Tortillas • 4
- Lean Ground Chicken (98%) 12 oz (340g)
- Turkey Bacon • 4 slices, cooked and chopped
- Fat-Free Shredded Mozzarella Cheese • 112g
Ingredients for Sauce (blend until smooth)
- Enchilada Sauce • 4 tbsp (60g)
- Chipotle Peppers in Adobo Sauce • 2 peppers
- Fat-Free Cottage Cheese • 8 tbsp (120g)
Directions
How to make it
- In skillet over medium heat cook chicken until done, season with salt and pepper.
- While the chicken cooks, blend enchilada sauce, chipotle peppers, and cottage cheese until smooth
- Once chicken is cooked, stir in the blended sauce and cook together for another 1-2 minutes until well combined and heated.
- I cook bacon in batches ahead of time, so I have plenty available when needed. Chop cooked bacon into pieces
- Warm each burrito and assemble with 1⁄4 chicken mixture, bacon, and cheese.
- Roll each tortilla tightly into a burrito.
- Optional: Toast seam-side down in a dry skillet or air fryer until golden and the cheese melts.
