What you need

Ingredients

  • Extra Lean Ground Beef (96% Lean, 4% Fat) • 453g (1 lb)
  • Shrimp, Cooked • 90g (15 large)
  • Chipotle Peppers in Adobo Sauce • 210g (14 pieces)
  • Greek Yogurt, Nonfat • 200g
  • Fresh Lemon Juice • 15g (1 tbsp)
  • Carb Counter Corn Tortillas • 5 tortillas (210g)
  • Fat-Free Mild Cheddar Cheese, Shredded • 210g
  • Coleslaw • 200g

How to make it

  1. In a blender or food processor, combine chipotle peppers, Greek yogurt, and lemon juice. Blend until smooth. Set aside.
  2. In a bowl, mix ground beef with roughly chopped shrimp and a few spoonful’s of chipotle sauce (just enough to lightly coat).
  3. Press a thin layer of the meat mixture onto one side of each tortilla. Heat a skillet or flat iron grill over medium and place meat-side down. Cook 4-5 minutes or until crisp and browned. Flip briefly to toast the other side.
  4. Top each taco with coleslaw and shredded cheese.
  5. Optional: drizzle with extra chipotle yogurt sauce for extra heat!
