- Ground Beef Extra Lean • 1 lb.
- Ground Garlic • 1 Tsp
- Ground Onion • 1 Tsp
- Ground Pepper • .5 Tsp
- Shrimp cooked or raw • 15 pieces
- Shredded Cheddar Fat Free •210g
- Dry Coleslaw • 200g
- Tortillas • 5 each
Ingredients for chipotle sauce
- Chipotle Peppers in Adobe Sauce • 7oz
- Greek Yogurt, Nonfat • 200g
- Lemon Juice • 1 Tbsp
Directions
How to make it
- Add ground meat to mixing bowl, add garlic, onion, and pepper. Mix well.
- Split into 5 even balls
- Split shrimp into 5 groups and chop.
- Mix shrimp and meat
- Lay out tortillas and top with meat mixture.
- In a mini blender add lemon juice, yogurt, and chipotle sauce. Blend until smooth. May require scraping along sides.
- Place each tortilla meat down onto preheated gridle/grill. Cook until meat is done, only 2-4 minutes.
- Flip and top with cheese, 42g each.
- Top with coleslaw, chipotle sauce, and jalapenos.
- Tip: The sauce as-is has good amount of heat, adjust according to your taste, by adding chipotle peppers a little at a time.
