What you need

Ingredients for Main

  • Rotini (dry) • 8 oz
  • Chicken Breast • 1 lb
  • Salt & Pepper • to taste

Ingredients for Sauce (blend until smooth)

  • Grated Parmesan Cheese • 60g
  • Fat-Free Cottage Cheese • 336g
  • Chipotle Peppers in Adobo Sauce • 45g
  • Almond/Coconut Milk • 1/3 cup

How to make it

1. Cook Pasta according to directions

  1. Cube chicken. In skillet over medium heat cook chicken until done, season with salt and pepper.
  2. While the chicken cooks, blend chipotle peppers, milk, and cottage cheese until smooth
  3. Once chicken is cooked, stir in the blended sauce and cheese. Cook together for another 1-2 minutes until well combined and heated.
  4. Add pasta mix, stir until well combined.
  5. Optional: Optional Garnish: chopped parsley, crushed red pepper
