What you need

Ingredients for Chicken

  • Cubed Chicken Breast •1lb
  • Garlic Minced • 1 Tbsp
  • Basil • 1 Tsp
  • Red Pepper Flakes • 1Tsp
  • Salt • 1Tsp
  • Smoked Paprika • 1.5 Tsp
  • Cherry Tomatoes • 2 Cup 340g
  • Spinach • 4 oz

Ingredients for Creamy Sauce

  • Almond/Coconut Milk • 1 Cup
  • Light Cream Cheese • 100g
  • Grated Parmesan • 40g
  • Tomato Paste • 25g
  • Serve with rice, quinoa, or couscous

How to make it

  1. Cube your chicken and add it to a bowl. Spray with non-stick cooking spray and season with minced garlic, basil, red pepper flakes, salt, and smoked paprika.
  2. Add creamy sauce ingredients into mini blender and blend until smooth
  3. Preheat your stove top pan, cook chicken, then lower heat.
  4. Add creamy sauce mixture and stir. Once mixed add tomatoes and spinach.
  5. Cover and simmer until spinach is wilted.
