- Raw Chicken Breast cut into cubes 1lb
- Taco Seasoning 1.5pkg
- Lime Juice
- Onion Chopped 150g
- Red Bell Pepper Chopped 150g
- Orange Bell Pepper Chopped 150g
- Black Beans 100g
- Washed Uncooked Rice 210g
- 300ml Water or chicken stock for more flavor
Directions
How to make it
- Place chicken in a mixing bowl. Hit up with nonstick. Add 1 package of taco seasoning and mix well.
- Add to a preheated pan, cook until done and remove.
- In the same pan add bell peppers and onion, mix and cook for a couple minutes.
- Add beans and mix.
- Mix .5 package of taco seasoning with rice. Make some space and add rice. Let toast for a minute or two.
- Add chopped tomatoes, and 300ml Water or chicken stock. Mix, cover and simmer for 15-20 minutes. Stir occasionally to prevent the rice from sticking.
- When rice is done, add Chicken back into pan
- Cover simmer for a couple minutes.
- Optional: Garnish as you wish
