Mexican Style Chicken & Rice Meal Prep

What you need

Ingredients

  • Raw Chicken Breast cut into cubes 1lb
  • Taco Seasoning 1.5pkg
  • Lime Juice
  • Onion Chopped 150g
  • Red Bell Pepper Chopped 150g
  • Orange Bell Pepper Chopped 150g
  • Black Beans 100g
  • Washed Uncooked Rice 210g
  • 300ml Water or chicken stock for more flavor

How to make it

  1. Place chicken in a mixing bowl. Hit up with nonstick. Add 1 package of taco seasoning and mix well.
  2. Add to a preheated pan, cook until done and remove.
  3. In the same pan add bell peppers and onion, mix and cook for a couple minutes.
  4. Add beans and mix.
  5. Mix .5 package of taco seasoning with rice. Make some space and add rice. Let toast for a minute or two.
  6. Add chopped tomatoes, and 300ml Water or chicken stock. Mix, cover and simmer for 15-20 minutes. Stir occasionally to prevent the rice from sticking.
  7. When rice is done, add Chicken back into pan
  8. Cover simmer for a couple minutes.
  9. Optional: Garnish as you wish
