What you need

Ingredients

  • Ground Chicken Breast • 448g
  • Minced Garlic • 7.5g
  • Onion, White/Yellow/Red • 75g
  • Zucchini, Raw • 638g
  • Red Bell Peppers, Raw • 262g
  • Diced Tomatoes & Green Chilies, Mild • 397g
  • Paprika, Smoked • 3.15g
  • Cumin, Ground • 3g
  • Salt • 6.1g
  • Black Pepper, Ground • 2.3g

How to make it

  1. In a large skillet over medium heat, add the ground chicken. Season with half of the paprika, cumin, salt, and pepper. Cook until browned and fully cooked through. Remove chicken from skillet and set aside.
  2. In the same skillet, add the garlic and onion. Cook until fragrant and the onion begins to soften.
  3. Stir in zucchini and red bell peppers. Cook for 5-7 minutes, until they begin to soften.
  4. Add the diced tomatoes and green chilies, plus the remaining paprika, cumin, salt, and pepper. Stir well and simmer for about 10 minutes.
  5. Add the cooked chicken back into the skillet. Stir everything together and cook for another 2-3 minutes until heated through.
  6. Enjoy on its own, with rice, in a wrap, or over greens.
