What you need

Ingredients for the Meatballs

  • Extra Lean Ground Meat 96% 1 lb.
  • Minced Garlic 1 Tbsp
  • Salt .5 Tsp
  • Black Pepper 2 Tsp
  • Italian seasoning .5 Tbsp
  • Smoked Paprika 1 Tsp

Ingredients for the Noodles

  • Ramen Noodles 2 pkg

Ingredients for the Creamy Sauce

  • Onion 200g
  • Mushrooms 100g
  • Chopped Cherry Tomatoes 100g
  • Salt 1 Tsp
  • Italian seasoning .5 Tbsp
  • Almond/Coconut Milk .75 Cup
  • Light Cream Cheese 90g
  • Parmesan 60g
  • Squeeze of 1/2 Lemon Juice
  • Light or Non-Fat Cheddar to top it off

How to make it

  1. Place meat in mixing bowl. Add Minced Garlic, Salt, Black Pepper, Italian seasoning, and Smoked Paprika. Mix well.
  2. Divide mixture into 24 even balls, feel free to adjust however you like
  3. Add meatballs to preheated pan. The goal is to brown the outsides
  4. Cook the onions, mushrooms and tomatoes for 5-8 mins till softened.
  5. Lower temp and add the milk and cream cheese
  6. Then bring to a light bubble, then add the lemon juice. Be generous with the lemon juice!
