- Blueberries • 250g
- Water • 20g
- Monk Fruit Sweetener • 20g
- Lemon Juice • 9g
- Cornstarch • 9g
- Vanilla Extract • 2g
- Low calorie tortillas • 3
- Vanilla Whey Protein • 25g
- Confectioner • 15g
Directions
How to make it
- Start by softening blueberries on medium heat in pot with water.
- Add sweetener and lemon juice and cook for 5 mins.
- Add in cornstarch slurry by mixing with water until a runny consistency and mix with no heat.
- Place it in the fridge for 1 hour.
- Cut tortillas in half and tri fold filling them and folding edges with a fork.
- Air fry for 5 mins and top with protein frosting (protein/confectioner/milk) should be slightly thick consistency.
