What you need

Ingredients for cake

  • Black Beans • 15.5 oz
  • Baking Soda • .5 Tsp
  • Baking Powder • 1 Tsp
  • Unsweetened Cocoa Powder 26g • 5 Tbsp
  • Vanilla Extract 13g • 1 Tbsp
  • Applesauce 76 g • 5 Tbsp
  • Monk Fruit Sweetener 96g • 24 Tsp
  • Egg White • 92g
  • Egg • 2 Large
  • Vanilla Extract • 1 Tsp

Ingredients for topping

  • Cream Cheese, 1/3 less fat • 54g
  • Chocolate Protein Powder • 30g
  • Monk Fruit Sweetener • 10g
  • Almond/Coconut Milk • 10g

How to make it

  1. Let’s start with the cake. Add all the cake ingredients into blender.
  2. Blend for 2-3 minutes until smooth. May require some scraping off from the sides.
  3. Pour into oven safe pan, I used an 8X8 and bake at 350, for around 40 minutes, I would suggest checking after 30 minutes.
  4. For the topping. Add cream cheese, protein powder, and sweetener to a bowl and mix. Then add milk and mix again.
  5. Pour mixture and spread evenly over cake and place in fridge until topping sets. I added some confectioner sugar as well.
